Appearance: A radiant yellow crystalline appearance with golden glints brought to life by a luminous bead of persistent fine bubbles. Aroma: There is an olfactory impact due to the richness of harmonious expressions (dry fruits, fresh citrus and white fruits) coupled with finely buttered seductive notes. A defined aromatic undertone which expresses the mature complexity linked to the vinification in oak barrels. Palate: The caressing and refreshing texture enhances the creamy sensation, dominated by a beautiful bracing vivacity. A burst of flavours (notes of grilled brioche, toffee) thanks to the distinguished power and maturity which is a mark of the great wines of Champagne.

Fermented in small oak barrels and aged for six to seven years on the bottle lees prior the disgorgement (dosage: seven grams per liter), the NV Brut Sous Bois is a blend of Pinot Noir, Pinot Meunier and Chardonnay in equal parts whose composition includes 67% of the 2009 harvest and 33% reserve wines from the 2008 harvest. The nose is spicy, pure and fresh, delivering small red berry, white fruit and floral as well as nicely fresh oak flavors to the ripe and well-concentrated nose. Full-bodied and rich, this is a very intense and well-structured, pure and vinous champagne clearly driven by the two Pinot varieties in terms of fruit and body. The Chardonnay, however, contributes freshness, finesse and a long, citrus-fresh and tightly structured finish. Tasted from lot L 390A743 44031 that was disgorged in October 2017. Tasted November 2018.
The distinctive Sous Bois style is inspired by oak-fermented parcels destined for Billecart’s top cuvees. It upholds the mandate of Billecart in freshness, tightness and elegance thanks to retention of malic acidity, charging it with drive and freshness, and with a swirling undercurrent of impressive richness. It sings with classic Billecart precision, while basking in the richness of barrel fermentation.
Some wood elevage adds light, cedary notes to the brioche, spiced-berry and apple-pastry aromas The palate has a smooth, full and focused feel with lemon-peel and white-cherry flavors in a crisp, assertive and fresh mode. Poached strawberries to close. This is superb! Drink now.
Fermented and aged briefly in wood, this is dry, intense and toasty while still giving space for white fruits and some citrus. Richly endowed, spicy, and tangy, its structure and tight texture mark it out as a Champagne for long-term aging.
